Butterscotch Apple Butter Cookies

I made these on a whim yesterday and am so glad I did!  These cookies are perfect for autumn; they remind me of caramel apples that you would find at a fall inspired event.  I used homemade apple butter given to us by a friend but feel free to buy some at the store or stir up your own.  The addition of butterscotch chips adds more sweetness, since these cookies only have 1/4 C of sugar.  The apple butter caramelized a bit, creating a ribbon of syrup in the cookies.  What a nice surprise!

These cookies are like little pillows of spice and fruit.  The whole family enjoyed them.  They make you feel all warm and happy inside, like Mom's apple pie.  Bake them today :)


Apple Butter Drop Cookies

  •    1/4 cup sugar
  •    1/2 cup shortening or unsalted butter at room temperature
  •    1  cup apple butter
  •    1  teaspoon baking soda
  •     2-1/4 cups flour
  •    1/2  teaspoon salt
  •    1  teaspoon baking powder
  •    1/2  cup milk
  •    1/2  teaspoon vanilla
  •    1 C butterscotch chips
Preheat oven to 350° F and grease cookie sheet.
  1. In a bowl, cream sugar and shortening or butter.
  2. Add apple butter and baking soda.
  3. Add flour, salt and baking powder alternately with milk. Mix well.
  4. Add vanilla and chips.
  5. Drop by tablespoonfuls onto prepared cookie sheet.
  6. Bake for 9 minutes.  Let cool on cookie sheet for 5 minutes.  Transfer to wire rack to cool completely.
