Oatmeal Mondays

After a busy weekend of cookie eating, I need to get back on track!  Here is a hearty bowl of oatmeal filled with antioxidants and healthy fats.  Chewy and juicy with a hint of spice, this breakfast is sure to cure even the worst cookie hangover!

 
Blueberry Cinnamon Coconut Oatmeal

heaping 1/2 C old fashioned oats
1/2 C frozen blueberries
2 T unsweetened coconut flakes
cinnamon to your liking

Place oats, blueberries, coconut flakes and cinnamon in a microwave safe bowl.  Fill with enough water to cover and cook on high for 3 minutes in the microwave.  Stir and enjoy :)
