Oatmeal Mondays

Happy December 2nd and happy return to preschool after Thanksgiving break!  Hooray for Monday!

To mark the beginning of December, we're making frosty no-bake granola bars.  If you like banana, chocolate and peanut butter flavored treats, you'll love having these in your freezer for a quick go-to snack.  They come together in a jiffy and are so versatile.  I typically use Kashi Go Lean Crunch cereal but any crunchy cereal will work.

On a cold day like today, you may want to eat these with mittens on but that would be weird and super messy.  Instead, do what we do and eat them as quickly as possible :)    

Frosty No-Bake Granola Bars

Makes 12

  • 2 large overripe bananas
  • 1 cup oats
  • 1/2 cup crunchy cereal
  • 2 tbsp pure maple syrup (or any other sweetener you use)
  • 2 tbsp peanut butter or other nut or seed butter
  • 2 tbsp semi-sweet chocolate chips
  • 2 tbsp dried cranberries or other fruit
  • 2 – 4 tsp cocoa powder
Line a muffin pan with paper liners, or use a silicone muffin pan for easy removal.  Mash the bananas.  Add wet ingredients and cocoa powder and mix well.  Add all other ingredients, mix well then press into prepared muffin tin.  Freeze at least 60 minutes before serving.
