- 1 & 3/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 2 tablespoons unsweetened cocoa powder
- 3/4 cup granulated sugar
- 3/4 cup semisweet or milk chocolate chips plus 1/4 cup for tops
- 1 cup milk
- 1/3 cup + 2 teaspoons canola oil
- 1 large egg
- 1 teaspoon vanilla extract
Preheat oven to 375°. Grease or line a 12-cup standard muffin pan.
Whisk
together flour, baking powder, baking soda, cocoa, and sugar. Stir in
3/4 cup chocolate chips. Add milk, oil, egg, and vanilla, and stir just
until blended. Spoon
batter into prepared pan. Sprinkle remaining 1/4 cup chocolate chips on
top. Bake 15-20 minutes, or until muffins are dark, risen, and springy.
