Hot Chocolate Bread Pudding



I made this for the kids this morning.  Albeit not the healthiest breakfast but one I thought they would enjoy.  It came together in a flash and made the house smell amazing.  

Hot Chocolate Bread Pudding

Ingredients
  1. 2 1/2 c cubed bread
  2. 1 pkt hot chocolate mix ( 1 oz. )
  3. dash of salt
  4. 1/4 c hot water
  5. 1/4 c milk
  6. 2 eggs
  7. 1/2 tsp vanilla extract
  8. mini marshmallows
Instructions
  1. Preheat the oven to 350 degrees F.
  2. Butter 4 4oz. ramekins. Set aside.
  3. Place cubed bread on a parchment paper lined sheet and toast in the oven for 5 to 8 minutes. Set aside.
  4. In a small mixing bowl, whisk together hot chocolate mix, salt, water and milk. Add eggs and vanilla and whisk well.
  5. Divide bread cubes among 4 ramekins. Pour the hot chocolate egg mixture over the bread pieces, dividing it equally among the ramekins ( start with 1/4 c per ramekin ).
  6. Place the ramekins on baking sheet and bake the bread pudding for 10 minutes. Carefully remove the sheet from the oven and top each bread pudding with mini marshmallows. Return to the oven and bake until the custard is set and the marshmallows are toasted, about 10 more minutes.
  7. Cool slightly.  Serve warm immediately.
