Cake Fridays

My daughter loves cookie butter.  She's also been begging me for cupcakes lately so I came up with this creation.  These are not your average fluffy, tall cupcakes.  These are rich, dense snack cakes that just melt in your mouth.  She loves them and that's all that matters :)

Cookie Butter Snack Cakes

1 C flour
1/2 C quick oats
1/2 t baking powder
1/2 t salt
1/2 C sugar
1/2 C cookie butter
1 stick soft butter
1/2 C applesauce
1/4 C milk
mint truffle Hershey's kisses and Reese's peanut butter cups, optional

Combine flour, oats, baking powder and salt in bowl.  Set aside.  In stand mixer, cream butter, cookie butter and sugar until light and fluffy.  Add applesauce.  Mix again.  Add flour mixture alternately with milk, starting and ending with flour mixture.  Bake in a preheated 350 degree oven for 17 1/2 minutes.  Once out of the oven, press mint truffle kiss or peanut butter cup into the center, if desired.  Makes 15.
