Baby It's Cold Outside...

so let's make cookies.  Many different kinds of cookies.  My father-in-law sent me this recipe.  It comes from Shaw's Supermarket up north.  They sell the chewiest cookies in their bakery section.  They come in these brown crinkly bags with a cellophane window so you can peek at your treat.  When my husband and I lived in MA and ME, we frequented the store for late night runs of cookies and ice cream.  On several occasions, we ate WAY too many and paid for it the next day but oh was it so worth it :)  Thanks for bringing back those memories, father-in-law of mine!

1 dough, many variations.
 
Combine 10oz semisweet & 2oz unsweetened chocolate (chopped) and 1/4 C butter.  Melt in double boiler. Cool 5 minutes. Whisk in 3 large eggs & 1 C sugar. Stir in 3/4 C flour, 3/4 tsp baking powder & 1/4 tsp salt.  Cover and refrigerate at least 2 hours.
 
Preheat oven to 350 degrees.  Set dough at room temperature for 15 minutes. Scoop dough into 1 tablespoon portions, roll into balls, and bake about 8 minutes or until they no longer look wet on top.
 
Variation 1.
Spread a tbs of Nutella to make a sandwich cookie.
Variation 2.
Stir in white or regular chocolate chips before chilling dough.
Variation 3.
Make a thumbprint before baking, fill with peanut or cashew butter or Hershey kiss.
Variation 4.
Whip up a frosting with peppermint extract, make sandwich cookies.
Variation 5.
Mix in Macadamia nuts before baking.
Variation 6.
Use your imagination!
