We heart these cookies! I've been making them for as long as I can remember. They are hearty cookies with heart healthy oats and wheat germ. Feel free to swap out any nuts and dried fruit, but definitely add the coconut. It gives these cookies texture and a sweet buttery flavor. I love that about flaked coconut. Not only does it smell like the tropics, but it really heightens the flavor of baked goods. I typically make these with a little less sugar and mix in chopped almonds and dried cranberries. Enjoy :)
