We had some extra strawberries hiding in the fridge so I made strawberry cream cheese.
Here's how:
Put 4 oz room temperature cream cheese (1/2 of a block) in a stand mixer with paddle attachment.
Add 6-7 chopped strawberries, depending on size and flavor you'd like.
Mix until well incorporated and store in the fridge in an airtight container.
Enjoy on pancakes, toast, and tortillas sprinkled with cinnamon and sugar, or use it as a dip for graham crackers, pretzels, and fresh fruit.
