Rainy Day Muffins


When life gives you rain, make muffins :)

Buttermilk Peanut Butter Chip M&M Muffins
Slightly adapted from Joy of Baking

2 1/2 C white whole wheat flour
3/4 C sugar
2 t baking powder
1/2 t baking soda
1/4 t salt
1/2 - 3/4 C peanut butter chips

Combine in large bowl.  Set aside.

3/4 C buttermilk
1 egg
1 t vanilla extract
2/3 C canola oil

Whisk together in small bowl.  Add wet ingredients to dry ingredients and stir to combine.  *Fill each muffin cup 3/4 full of batter.  Dot each muffin top with 3 M&Ms, if desired.  Bake at 375 degrees for 18-20 minutes or until toothpick inserted into the center comes out clean.  Cool in pan on wire rack for 5 minutes.  Invert and cool completely or eat warm.         


*I used a mini muffin pan and baked for 9 minutes.
